Instant Pot Chipotle Chicken Bowls- Low Fat, THM E

These spicy, exotic chicken, brown rice, and black bean bowls will warm you up in a hurry, help you burn fat, and cook in a flash in the Instant Pot!

Course: Main Course
Servings: 6
Ingredients
  • 2 large frozen chicken breasts
  • 1 can fire roasted tomatoes
  • 1 can black beans, rinsed and drained
  • 3/4 cup brown rice, uncooked
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 tsp chipotle pepper, use up to 1 tsp if you like spicy food
  • 1 cinnamon stick
  • 2 tsp chili powder
  • 1 tsp coriander
  • 1/3 cup fresh cilantro leaves, ripped into small pieces
  • 2 cups water
Instructions
  1. Add ingredients in the order listed above to the Instant Pot. Do your best not to let much rice fall to the bottom of the pot to keep it from scorching. 

  2. Cook on High Pressure for 20 minutes. Let the pressure release naturally (about 10-20 minutes). Shred chicken, stir, and enjoy!

  3. Remove cinnamon stick before eating.

Recipe Notes

Feel free to top with fat free Greek yogurt, cilantro, or diced green onions to keep it in low fat (THM E) mode. Add the extra chipotle pepper if you love spice in your dish!

If you or your littles need a crossover, consider adding some avocado slices or cheddar cheese on top- yum!

        1. I haven’t yet. My family is pretty small (mom, dad, picky 4 yr old, and toddler), and this is my only recipe that doesn’t make great leftovers (the flavor is simply better the first time around with the fresh herbs). But I think you should be okay to double it if you’ve got enough room in your instant pot. 🙂

          Sorry to hear about your Instant Pot! I haven’t made this recipe in the crockpot yet, but I’d love to hear what you think if you try it! I would make sure that the chicken is defrosted first, add about 1/4-1/2 cup of water (the frozen chicken releases water while cooking in the Instant Pot, and keep an eye on it after it’s been cooking for a while to see if it needs a little more water) and then cook everything on low for 5-6 hours or high for 3-4. You could try 1/2 tsp cinnamon instead of the cinnamon sticks. Let me know how it goes. 🙂

    1. Hi, Ivonne! Sure! You should be able to use fresh chicken, but I would also add an extra 1/3 cup of water to make sure that the rice has enough liquid to cook in. The frozen chicken adds some extra water to the mix as it defrosts and cooks. Let me know how it turns out!

  1. I’m so new to the Instapot! Do I keep the valve sealed while cooking this recipe and slow release after?

    1. Hi, Britney! Thanks so much for the congrats on the new baby– she’s a sweetie! 🙂 And welcome to Instant-Potting! Hope that you love it! Yes, please keep the valve sealed while cooking, and then I turn off the Instant Pot and just let the valve release naturally. Natural release (you don’t have to touch it at all; it’ll just go down on its own) usually takes about 8-10 minutes. I’ve found that this extra time helps the rice to cook fully and fluff up a bit. Hope that you like it! 🙂
