I LOVE when I can made easy THM crockpot meals so much that I made it into a simple one week THM-friendly Menu.

“I hate it when I go looking for food in my pantry and all I find are ingredients.”

Sometimes I feel like that’s the story of my THM life.

I do awesome at staying on plan when I meal prep and have snacks ready, but I’m a lot more likely to fall off the wagon when I only have ingredients in my pantry. Anyone else?

Lately, I decided that cooking dinner every night is a bit challenging. My kiddos are learning to share toys (the little one is 2 and just started wanting big sister’s toys), and it seems like I need to referee every night during my cooking-dinner-time.

Some nights, I struggle to get taco salad on the table. And I use bagged salad. And all I’m doing is cooking beef and adding pre-mixed spices (we love this Taco Seasoning recipe).

This menu was designed with easy dinner times in mind. So if you need to settle a toy dispute, fold some laundry, or just want to put up your feet and read a good book for 30-60 minutes before dinner, these are the THM Crockpot Meals and Menu Plan for you!

Don’t Love All the Meals?

This meal plan is actually loosely based off of my Easy, Reusable THM Meal Plan that I’ve been using to meal plan for over a year.

If you’re not crazy about any of the individual THM crockpot meals, feel free to switch ’em out for any on plan, family favorite.

I didn’t want to include any recipes from the THM cookbooks just in case you don’t have them, but my favorite slow cooker meals from the First THM Cookbook are:

  • Cajun Cream Chicken (serve over Dreamfields or zoodles; can get frozen zoodles that steam in the microwave for easier dinner)
  • Chicken Florentine
  • Wacha Want Mexican Chicken
  • Wicked White Chili

1. let someone else shop for your groceries

Save even more time by using one of these methods to get your groceries. We do a combo of Walmart Grocery Pick Up and Instacart delivery (they shop at Aldi for me).

I’ve heard great things about Amazon grocery delivery, but it’s not available in my area yet.

  • Walmart Grocery Pick Up- They shop for you, you pull into the indicated parking spots, and they load stuff right into your car. Easy-peasy, lemon squeezie. Added bonus- if they don’t have what you ordered, you often get an upgraded brand or size! Do check your produce and eggs though! Save $10 off your first Walmart Grocery Pick Up Order here!
  • Instacart Grocery Delivery- They shop for you and bring it straight to your door. My shoppers go to Aldi for me (yay for on plan sprouted bread and cheese crisps!). You can try InstaCart and get $10 off your first order with my link. (I always get a special ingredient or two that I might not normally by when I get $10 off a new service :).
  • Amazon Fresh offers amazing service if it’s available in your area. You get free grocery delivery with Amazon Prime.

I LOVE getting THM-friendly stuff from Amazon cuz I use Amazon gift cards earned free from Swagbucks.

2. Cut Down On Dirty Dishes

I’m very much a Trim Healthy Mama Drive Thru Sue, so I’m a huge fan of less dishes and cooking.

To save time in the kitchen, you could consider using a crockpot liner.

From a health standpoint (I was an integrative medicine physician assistant before I had kids), I’m not sure that exposing plastic to heat for long periods of time is the safest thing to do.

Plastic when heated to high temperatures often releases harmful substances. So, use at your own discretion.

You might want to use a crockpot with a removable cooking pot to make it easier to wash.

Mine is like that, and I’ve made a promise to myself that I have to wash it out every night after dinner. So far, so good, and it’s keeping my kitchen counters free of dirty dishes!

If you don’t want to do any extra dishes, feel free to get microwavable sides.

THM Crockpot Meals and Menu Plan

The main focus of this THM Crockpot Meals and Menu is to have THM crockpot meals for dinner.

But, to make the other meals of the day easier, too, I’m adding in some crockpot breakfast recipes and easy/make ahead lunches, too.

You can sub the crock pot recipes for simple eggs or oatmeal for breakfasts and sandwiches on sprouted bread or salads for lunch.

Please feel free to switch any of the recipes around for on plan family favorites instead (oo and please let us know in the comments if you do! I’m always looking for new family-friendly favorites!).

Monday

Dinner options: We’re going for a classic crock pot Pot Roast for a yummy, soothing dinner. Please feel free to use your favorite Pot Roast seasonings and recipes, but please make it low carb (no potatoes! try radishes or jicama).

I put the meat, radishes, onion slices, and a handful of baby carrots in the crockpot, sprinkle with some garlic powder, mineral salt, and 1/2-1 cup beef bone broth, then cook on low for 6 hours or high for 3 hours.

Here’s some other low carb pot roast recipes to try:

Tuesday

  • Breakfast- Cinnamon Crockpot Granola (THM E); eat as granola in a bowl, top with almond milk and berries
  • Lunch- leftover Pot Roast or large salad with rotisserie chicken and THM S toppings (my favorites are ranch dressing, bacon bits, and cheese Whisps crumbled for croutons) (THM S)
  • Dinner- Slow Cooker Spanish Chicken and Rice (THM E)

Dinner note- I’m using the new microwavable Quinoa and Brown Rice blend that I just found at Aldi to have less dishes. It’s pre-cooked and just needs to be heated.

Feel free to make a pot of brown rice (less preservatives and more budget-friendly).

Wednesday

  • Breakfast- Low Carb Keto Slow Cooker Coffee Cake (THM S)- yay! cake for breakfast!
  • Lunch- Leftover Spanish Chicken and Rice or chicken breast with Light Laughing Cow Cheese on 2 slices of sprouted bread with Oikos 000 Greek yogurt, berries, and carrot and celery sticks (THM E)
  • Dinner- Sweet and Spicy Stirfry (THM S or FP)- make the S or FP version over cauliflower rice (I buy the organic riced cauliflower from Walmart that steams in the microwave)

Thursday

  • Breakfast- leftover Cinnamon Crockpot Granola (THM E); make a parfait with Greek yogurt, berries, and granola
  • Lunch- leftover Sweet and Spicy Stirfry or salad with rotisserie chicken and THM S toppings (THM S)
  • Dinner- Easy Keto Broccoli Cheese Soup (THM S); if you have time, whip up some Low Carb Cheddar Bay Biscuits

Friday

Other Dinner Options: I was looking for a pizza casserole where I don’t have to brown some meat first and could just put everything in my crock pot. If you’d rather do that (yay for yummy beef or sausage!), you might want to try these pizza casseroles in the crockpot:

Saturday

Breakfast- Apple Pie Muffins with Crave-Worthy Crumble if you feel like baking (THM E) or any crockpot breakfast leftovers that you still have (E or S)

Lunch- Leftover Pizza Casserole or BBQ Chicken Pita Pizza and S side salad (THM S)

Dinner- Chili (THM E)

Dinner Notes: We like the Save My Sanity E Chili from the Trim Healthy Table Cookbook or this easy E chili:

  • Put 96% lean ground beef in the bottom of the crockpot. Break into pieces.
  • Add 1 can rinsed and drained light red kidney beans and one can rinsed and rained dark red kidney beans. Add one can tomato paste.
  • Use chili seasonings of choice. I use the seasonings recommended for Pearl’s Chili from the first THM cookbook (I use the full amounts she recommends even though I otherwise half the ingredients)
  • Stir and cook on low for 6 hours or high for 3 hours.
  • Serves 4.

Sunday

Breakfast- Crockpot Quiche or Coffee Cake (THM S)

Lunch- Leftover chili or Sandwich on sprouted bread (use lean deli meat and Light Laughing Cow Cheese if desired), veggies, and 1 small piece of fruit (THM E)

Dinner- Bacon Wrapped Chicken and Rosemary’n’Garlic Faux-Tatoes (THM S or XO)

  • Use defrosted skinless, boneless chicken thighs (I get mine from Aldi). Cover with a dash of olive oil, dash of mineral salt, dash of garlic powder, and sprinkle with dried rosemary, Wrap a piece of bacon around each chicken thigh to cover with a single layer of bacon. Set aside.
  • Cut radishes, jicama, or red potatoes (for a XO) into chunks. Place at the bottom of the crock pot then add 1-2 tsp olive oil, 1 tsp minced garlic, and 1/2 tsp rosemary. Mix together and spread evenly across the bottom.
  • Top with bacon wrapped chicken. Cook for 5-6 hours on low or 2.5-3 hours on high. Serve with a side salad.

Snack and Dessert Ideas:

Okay, I think we’ve given our crock pots plenty of good exercise! 🙂

Here’s some easy grab and go dessert and snack ideas. Just be sure to have 3 hours in between an S meal and an E snack (and vice versa).

  • dark chocolate (85% or higher) and natural peanut butter (S)
  • fruit and a cheese stick (E)
  • 2 Wasa crackers and Light Laughing Cow Cheese and cucumbers (FP)
  • cottage cheese and fruit (E)
  • pepperoni slices wrapped around pieces of full-fat mozzarella cheese; celery sticks (S)
  • side salad with some protein on top (S or E)
  • Greek yogurt with stevia and Cinnamon Crockpot Granola and berries (E)
  • celery with peanut butter (S)
  • Easy Peasy Peanut Butter Fudge (S)

You can also make a big batch of your favorite THM cake or muffins for desserts for the week.
